Pumpkin pie deconstructed. That’s the inspiration behind Aqua Lounge’s latest cocktail experiment. During the month of pumpkin spice madness, the bartenders at The Island Hotel decided to celebrate autumnal flavors with their take on a Thanksgiving favorite: pumpkin pie. The Seasonal Spice cocktail combines fresh pumpkin puree with vanilla-flavored vodka, spiced rum and sweet butterscotch schnapps. This spiked-version is reminiscent of pumpkin pie a la mode – and is best suited for the adult’s table.

Seasonal Spice
1 ¼ oz. Absolut Vanilla Vodka
1 oz. Captain Morgan’s Spiced Rum
½ oz. butterscotch schnapps
¾ oz. pumpkin puree
¼ oz. half and half
Cinnamon, sugar and whipped cream, for garnish
Combine all ingredients in a chilled shaker with ice. Shake well.
Strain into a martini glass rimmed with cinnamon sugar.
Top with whipped cream.
