How to make Settebello's peach of a Bellini

Settebello’s specialty is its artisanal Neapolitan-style pizzas. But this summer the quaint Newport Coast eatery features another Italian classic: the Bellini.

Inspired by Harry’s Bar in Venice, Settebello’s mixologists have revamped Arrigo Cipriani’s classic peach Bellini recipe. Fresh white peaches puréed in-house create the base for the Muso Bellini. A splash of fruity Campari and a touch of sweet grenadine enhance the drink’s blush-red color before it’s topped off with bubbly prosecco. The refreshing libation sips smooth while you luxuriate by the small trees growing among the restaurant’s wooden tables as the cool nighttime breeze wafts in through the eatery’s retractable glass walls. 5 oz. prosecco
