In the Raw
In late spring, carrots burst with flavor. At Babette’s in the Crystal Cove Shopping Center, owners Zach Layton and his mother, Barbara, embrace the crunchy root vegetable by incorporating its nectar into one of four artisanal cocktails. Enhanced with spicy ginger and brightened with a squeeze of lemon, the well-balanced 24 Karats washes over
the palate with a natural sweetness that sips smooth.
1 oz. cold-pressed carrot juice
½ oz. cold-pressed ginger cordial*
½ oz. fresh lemon juice
1 Tbs. ginger juice
2 oz. vodka
Combine ingredients in a shaker with ice.
Fine strain. Serve in a martini glass. Garnish with lime peel ribbon.
Heat 10 oz. cold-pressed ginger juice in a saucepan to 140 degrees. Whisk in 13 oz. raw cane sugar. Transfer to a pan with an ice bath and add 1 cracked star anise pod and a pinch of black pepper.
