The swanky Laguna BEach eatery crafts cocktails that incorporate unexpected ingredients. Nye’s latest creation is The Salad Bar, a libation with the vegetable du jour: kale. It’s like a green juice gone wild.

The Salad Bar

1/4 cup kale

1 slice red bell pepper

2 oz. sage liquor

2 oz. lemon sour

Muddle the pepper and kale. Pour other ingredients into a metal shaker and add ice. Shake, and strain into a double old-fashioned glass with fresh ice.
