Out of all the berries, raspberries are the easiest to enjoy straight off the vine. As a child, my first time berry picking, I was looking forward to eating the strawberries and blueberries. To my surprise, the raspberries were the most fun. I devoured the warm, sweet and tangy fruit plucked straight from the abundant bushes. Unlike strawberries, the raspberries were easy to spot and with very little effort, I collected several baskets within minutes. Since then, I’ve been a framboise fan, especially when these berries are prepared as a dessert. For those who can’t stand seeds, we have a saucy raspberry coulis recipe for you. – 2 ½ cups raspberries
– ¼ cup sugar
– 1 teaspoon fresh lemon juice
– 1 teaspoon lemon zest
– pinch of salt
– Small saucepan
– Fine mesh strainer
– Heatproof bowl
1) In a saucepan, combine raspberries, lemon juice and sugar. Cook on medium heat until sugar dissolves.
2) Purée raspberry mixture, lemon zest and salt in a blender.
3) Remove any seeds by passing the mixture through a fine mesh strainer into a heat-proof bowl.
4) Serve with vanilla ice cream or panna cotta.
